Although my sister and I thought we were synchronized swimming stars when we were younger, sadly we never made it to the Olympic Gamess. So instead, we get to enjoy the Rio 2016 Olympic Games, snacking on homemade sweet potato fries and sipping ice-cold Coca-Colas…sounds like a #ThatGold moment to me! With that, my sister went simple and taught me how to make Sweet Potato Fries with a couple accompanying dips. Honestly, I am all about the small achievements in life, because I have successfully made these quite a few times now. That sound like reason enough to celebrate for me! Sweet Potato Fries + Chipotle mayo & Spicy Siracha Ketchup recipe after the break!

Sweet potato fries
2 sweet potatoes
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic power
1/4 tsp paprika

Preheat oven to 350 degrees. Peel and cut sweet potatoes into fries. Coat fries with olive oil and spices. Spread onto baking sheet in a single layer. Bake at 350 degrees for 25 minutes or until golden and slightly crispy. Flip the fries half way through cooking time.

Chipotle mayo
2 chilies in adobo sauce
1 clove garlic
1/2 cup mayo  

Spicy Siracha Ketchup
2 tsp siracha
1/4 cup ketchup
1 tbsp diced Jalapeño
