When I think of New Years Eve parties the first thing that comes to mind is sparkle! Sequins is must in my outfit, but why just wear something glitzy when you can wow party-goers with a confection that is just as festive. Cake pops are pretty much the cutest way possible to eat desert, so I came up with a few delicious recipes with COFFEE-MATE  for anyone with the baking bug this holiday. And the best way to top off your Ball Drop Cake Pops? Edible glitter! After you frost your cake, brush on a little sugar water and cover each pop with edible glitter. Sparkle never looked so good! Chocolate Peppermint Mocha Cake Pops *Makes about 40 pops*

1/3 cup unsweetened cocoa powder
1/3 cup hot brewed coffee
1 cup all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon  baking powder
1/4 teaspoon salt
1/3 cup softened, unsalted butter
3/4 sugar
1 large egg
1 large egg yolk
1/3 cup COFFEE-MATE Peppermint Mocha Flavored Creamer
1 teaspoon vanilla extract
1 cup frosting

If you have a cake pop maker, spray it with nonstick baking spray. If not, preheat oven to 375 degrees.
In a small bowl, whisk together cocoa and coffee.
In another bowl, whisk together flour, baking soda, baking powder, and salt.
In a medium bowl, beat butter until creamy. Add sugar, mix well. Add an egg, then an egg yolk, mixing well after each addition.
Whisk creamer and vanilla into cocoa mixture.
Alternatively, add flour mixture and cocoa mixture to butter mixture, making three additions of flour and two of cocoa. Mixed until combined.

If you have a cake pop maker, fill the wells with batter and bake for 4 minutes. If not, pour batter into cake pan and bake for 40 minutes. Let cake cool and then crumble it into small pieces. Take a dollop of frosting and mold crumbs into a round cake pop.

Chocolate Chip Cake Pops *Makes 50 cake pops*
1 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup sugar
1/2 cup softened, unsalted butter
2 large eggs
1 teaspoon vanilla extract
1/3 cup COFFEE-MATE Chocolate Chip Cookie Flavored Creamer
1/2 cup mini chocolate chips
1 cup frosting

If you have a cake pop maker, spray it with nonstick baking spray. If not, preheat oven to 375 degrees.
In a small bowl, whisk together flour, baking powder, baking soda, and salt.
In a medium bowl, beat sugar and butter until fluffy. Add eggs, one at a time, beating well after each addition. Mix in vanilla. Alternately, add flour mixture and creamer to butter, making three additions of flour and two of creamer, until blended. Gently stir in mini chocolate chips until well mixed.

Spiced Rum Cake Pops *Makes 45 cake pops*
1 1/3 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
Pinch of salt
1 cup brown sugar
1/2 cup softened, unsalted butter
3 large eggs
1/2 cup COFFEE-MATE  Spiced Rum Cake Flavored Creamer
1 cup frosting

If you have a cake pop maker, spray it with nonstick baking spray. If not, preheat oven to 375 degrees.
In a small bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
In a large bowl beat brown sugar and butter until fluffy. Add eggs, one at a time, beating well after each addition. Alternately, add flour mixture and creamer to butter mixture, making three additions of flour and two of creamer, and beating until smooth.
