One of my favorite winter traditions is hot chocolate loaded up with marshmallows, so this year I decided to take it to the next level and make my own! Since any sort of baking (well in this case just mixing) is foreign to me, I ask my friend Alexis from Yield BakeHouse to join me in the kitchen to whip up a batch of marshmallows. The result were absolutely delish (much better then store-bought) and SO SIMPLE. After you cut out your snowflake shapes, sprinkle on a little couple crushed up candy-canes, and pile high on top your hot cocoa, then grab your cutest critter mittens and start sipping! Snowflake Marshmallows
What You’ll Need:
9×13 baking dish, buttered generously
snowflake cookie cutters, any size
1 cup water
3 envelopes unflavored gelatin
2 cups granulated sugar
1/2 cup light corn syrup
1/2 teaspoon salt
2 tablespoons pure vanilla
2 – 2 1/2 cups powdered sugar, for coating
Step 1: In a stand mixer, fitted with a whisk attachment, add gelatin packets and 1/2 cup water. Let stand for water to soak into the gelatin. (You could use a large bowl and hand mixer if you do not own a stand mixer. Just make sure the bowl is deep enough to avoid anything splattering out. Mixer will become very hot later.)
Step 2: In a saucepan, on high heat, add in sugar, salt, corn syrup, and remaining 1/2 cup water. Stir to combine, and then let mixture come to a boil. Let mixture boil for 1 minute, and then remove from heat.
Step 3: Turn stand mixer on to low to combine the gelatin. Then slowly start to add the hot mixture. Be very careful at this point!
Step 4: Once the hot mixture is combine, turn stand mixer up to high, and mix for 12 minutes. Batter should become white and thick. Turn off mixer to add in vanilla, and then back on briefly to combine.
Step 5: Using a spatula, transfer the mixture to the prepared baking dish. Working quickly, smooth out mixture evenly. (Because holy moly this stuff is sticky!)
Step 6: Using a piece of greased plastic wrap, cover the marshmallow mixture and let sit at least 3 hours. (Or overnight!) Marshmallows will be too sticky to cut out right away.
Step 7: Cookie cutter time! This is where the powdered sugar comes in. As you start to cut out your shapes, coat the marshmallows with a generous amount of the powdered sugar. (I also find it beneficial to coat my cookie cutters with the powdered sugar as I go.)
Step 8: Add to some hot chocolate and Enjoy!

    I make peppermint marshmallows and hot chocolate every year for after we get out tree.
    It’s super simple to add flavor, just add a drop or two of extract while whipping.
    The first time I made them
    I was surprised how simpe and delicious they are to make.
